I Love Eggs

Needless to say, we go through a lot of eggs around here.  Eggs are one of my favorite things to eat.  I love them scrambled, as a fritatta, omelets, shirred, and over easy is a favorite but Amy says those are too messy for me to eat.  Our eggs come from a local farm and there is nothing better than a farm fresh egg.  The yolks are a deep yellow/orange in color and the taste is unbelievable.  If you have never had a farm egg – you must try one and you will never return to the store bought egg!  This morning Amy and Mark made another one of our guests’ favorite – Greek Scrambled Eggs – which are those wonderful farm eggs scrambled with fresh spinach, oregano from our herb garden and feta cheese and then topped with chopped tomato!  Delicious!  Very easy to make at home for a quick and healthy breakfast.
